Going gluten free can be really challenging, especially when trying to find quick and easy snacks to munch on in between meals, especially during a busy workday, when you do not have time to meddle with any cooking.

Fruits are a good option, but they can get boring after some time.

What joy to discover the Simple Mills brand of gluten free products. These are readily available through iHerb.

I tried a few of their products and they tasted really good!

My favourite is the Simple Mills, Crunchy Almond Flour Cookies, Toasted Pecan.

My only complain is they aren’t cheap and run out too quickly! They are really yummy, with the right amount of sweetness and crunch, and tasted no different from non-gluten free products that I used to eat previously, without any grittiness commonly found in gluten free products. Highly recommended!

I also tried their Almond Flour Crackers, Fine Ground Sea Salt, which tasted not bad, but a tad too salty for me, though works wonderfully as a quick savoury snack.

Another of their product that I tried was the Almond Flour Mix, Banana Muffin & Bread. This is a muffin and bread mix that you can easily follow their instructions to whip up delicious muffins or bread.

I went with the muffin option and baked some muffins which were delicious although they did not look as pretty as that shown on the box. However, after getting diagnosed that I was sensitive to eggs, I tried using almond butter as an egg substitute, but the muffin did not turn out as well. I guess my proportions were off and the batter was too wet, resulting in a burnt top and undercooked interior. But if you follow their instruction exactly using eggs, they will turn out fine.

You can bake this over the weekend and store them in the fridge for quick snacks throughout the week.
